
I so love no-cook soup bases. Cream of celery is my favorite for silky gravy with meats and vegetable dishes.
This is the easiest one to make of them all.
You need:
- ½ cup of chopped celery, maybe more if you really like celery
- If using dehydrate or freeze dried celery, you can put in food processor and grind then use dry to have a smooth soup
This soup base can be used for almost any vegetable.
And it is no cook. Yay!
- 16 ounces of heavy whipping cream
- 4 ounces of Daisy sour cream
- 1 ounces of lemon juice
- 2-3 ounces of water.
This makes 24 ounces of soup.
For the celery soup, I would add ½ tablespoon of onion powder
And 1 teaspoon of salt and ½ teaspoon of pepper
Mix it all together and refrigerate to use within 3-4 days or split in half and put half in the freezer.
