Cream of mushroom soup

I love to use cream of mushroom soup in my cooking.   But the carbs are so horrible.

Well, I formulated my own no-cook keto cream of mushroom soup.

First I had to prepare the mushrooms

  • 1 ½ Tablespoon of Olive oil
  • 1 ½ Tablespoon of Butter
  • ½ pound of sliced mushrooms
  • 1 clove of garlic minced
  • ¼ teaspoon of salt
  • ¼ teaspoon of pepper

Sauté the mushrooms in the olive oil and butter.   Then I added the garlic for a short time so it wouldn’t burn. After pulling off the stove I added the salt and pepper. I let it cool.

I then pulsed it my food processor to a smaller state but not a puree.

I then added it to my no-cook soup base for cream of mushroom soup.
